  • 8 cups chicken broth

Steps or Directions:

  1. In a large pot, heat the vegetable oil. Add the onion and garlic and sauté until they become translucent.
  2. Add the chicken pieces and brown them on all sides.
  3. Pour in the chicken broth and bring it to a boil. Reduce the heat and simmer for about 30 minutes.
  4. Add the white, sweet, and andean potatoes, and the corn cobs. Simmer for an additional 30 minutes or until the potatoes are tender.
  5. Add the guascas and capers. Stir well and cook for another 10 minutes.
  6. Season the soup with salt and pepper to taste.
  7. Serve the ajiaco hot, with a dollop of sour cream on top.
